Lauroyl glutamic acid turns two familiar biochemical motifs into a surfactant. A C12 fatty chain supplies the hydrophobic tail, while the glutamate head can ionize and interact strongly with water. Its behavior changes with pH and counter-ion, which is why the free acid and sodium salts are chemically related but formulation-wise different. It is a neat example of lipid-like and amino-acid chemistry meeting at an interface.
